#Elf4Health – Monday, Week 1

Hello friends! How was your weekend? I’ve been fighting a nasty cold this weekend, and spent a lot of the weekend sleeping. I’m still not feeling well, and I’m hoping it passes by Thursday so I can actually taste my delicious Thanksgiving meal!

Even though I’m not feeling well, I’m not going to let that take away my excitement for the first week of Elf For Health!

Monday: Go Meatless

I’ve wanted to for awhile, but for some reason I’ve never participated in a #MeatlessMonday. This was perfect timing for this, because the beautiful Amy just posted a recipe I wanted to try & I had a spaghetti squash in my fridge, ready to be created into something delicious!

I made Spaghetti Squash “Lasagna” Bake, and it looked delicious! I can’t wait it for dinner tomorrow. Thanks Amy!

I’m excited for the rest of week as well, and will definitely update you all on my progress. I’m looking forward to connecting with my elf, and motivating them as well!

Tuesday’s challenge is to unsubscribe from e-mails and magazines that you are no longer reading or want.  Thank goodness! This has been on my to do list for awhile, and I’m glad to have the kick in the butt to do it :)

I seriously can’t say this enough, but I am so lucky to be a part of this amazing blogging community, and all the support that it gives!
